Pear & Almond Salad with a fresh herb dressing

Today’s post is going to be a very simple one. I’ve been swamped with many tests, assignments, projects, and other tasks that have needed my attention over the past couple of weeks, so please bear with me πŸ™‚ Although it might be a bit more ‘to the point’ than normal, today’s recipe is nothing short of delicious. I’m not going to share any special information about any of the ingredients used in today’s salad because, to be honest, the health benefits of getting more fruit and veggies into your diet are endless. Make yourself delicious salads from good, wholesome,  simple, fresh ingredients and you can’t really go wrong.

Although we had a nice bout of cold weather this weekend, spring has arrived in South Africa. With spring comes a renewed love for fresh, simple salads and fresh fruit, as opposed to the warm soups and stews that bring us comfort during colder winter months. This simple salad with a sweet twist came into being after a rushed visit to the shops where I grabbed a couple of random ingredients to make a salad for a family Sunday braai. Pears add a great texture and sweet element to the salad, along with the crunch of the almonds, and the sweetness of the cranberries.

Now for the dressing. A classic vinaigrette, or even a drizzle of extra virgin olive oil, adds an additional element to even the plainest salad. Store-bought salad dressings are known for containing large amounts of added sugar and other additives, so why not make your own homemade dressing? Pear & Almond Salad with a fresh herb dressing
A fresh, flavoursome spring salad. Perfect on its own or as a side.

For the salad
  1. Lots of green leaves (3-4 big handfuls)
  2. 2 pears
  3. 1/3 cup almonds, roughly chopped
  4. 1/2 packet of White Rock Cheese with Cranberries
  5. OR 1/3 cup dried cranberries (if not using cheese) and plain goat's cheese (if using cheese)
For the dressing
  1. 1/2 cup extra virgin olive oil
  2. 2 Tbsp apple cider vinegar
  3. 2 Tbsp honey
  4. 1/2 cup fresh mint, parsley, and/or coriander
  5. Salt and pepper to taste
For the salad
  1. Place the salad leaves in a big salad bowl or platter. Break apart large leaves if necessary.
  2. Chop the pears in half, and thinly slice each half. Scatter the sliced pears over the salad leaves.
  3. Add the roughly chopped almonds and cheese (or dried cranberries if not using cheese) to the salad and give it a toss
For the dressing
  1. Blend together all of the dressing ingredients using a hand-blender or high-speed blender until the herbs are nicely chopped and the dressing is well mixed
  2. Season to taste with salt and pepper
  3. Drizzle over the salad and enjoy πŸ™‚

    Delicious, Kirsty. Lately I’ve been craving Greens. This is the perfect Spring (yay!) salad + dressing to satisfy that craving. And I love that White Rock cheese too. Thank you for sharing your recipes, even when under academic stress ‘n duress!
